HOW TO RECOGNIZE BRESAOLA DELLA VALTELLINA

PGI MARK. Two control levels

The trademark "Protect Geographical Indication" (IGP) has been introduced by Reg. (CEE) n. 2081/92. Origin marks base their idea of quality on product's guaranteed origin and typicalness. Products that obtain origin mark must follow a strict Production's Regulations, that describes characteristics, producing progress and controls done to guarantee quality.

Bresaola della Valtellina has 2 control levels:

I Producer's control: each producer checks the compliance of raw materials, production process and final product with Production's Regulations through a careful and continuous monitoring, a detailed raw materials selection and sensory control as well as chemical analysis.

II: CSQA of Thiene (Vicenza County), with random inspections carried out by qualified personnel, verifies producers' activity to make sure they work accordingly to the Production's Regulations.

Product that doesn't reach the right qualifications cannot be sold under the mark PGI and must be degraded. It is also possible to revoke or suspend producing authorization to producers not respecting production rules.
